Vegan Friendly Recipe for Peach Crisp
7 Cups fresh or frozen fruit
1/3 c. sugar (I like to use Raw Turbinado Sugar)
1 Tbsp. flour
1 drop of Young Living Lemon Oil in 1 tsp. of water
1/2 tsp. grated lemon zest
1 c. Old Fashioned Oats
1 c. unbleached all-purpose flour
1/2 c. brown sugar
1 tsp. cinnamon
1/2 c. dairy-free margarine, cut into small pieces
Preheat oven to 400’F Combine the fruit, sugar 1 Tbsp. flour, lemon oil, and lemon zest. Place in an ungreased glass 8 in baking dish. Bake for 15 min
To make the topping, combine oats, 1 c. flour, brown sugar, and cinnamon with wire whisk. Cut in the margarine using a pastry blender or your fingers. Mixture should resemble pea size crumbs.
Take the fruit mixture out of the oven, sprinkle the topping over it, and bake for 30 min longer, or until the fruit is bubbling and the topping is browned. Serve warm, and enjoy!
